Mathi Varuthathu / Sardine Fry



Sardines are and excellent source of protein and good fatty acids.
For Sardine Fry,fishes are marrinated and deep fried in cooking oil..

INGREDIENTS:
  • Sardine - 10 nos
  • Turmeric powder - 1/2 tsp
  • Chilly powder - 1 tsp
  • Garlic pods - 1 nos
  • Ginger - A small piece
  • Shallots - 3 nos
  • Pepper powder - 1/4 tsp
  • Salt to taste
  • Oil for frying

PREPARATION METHOD:
  • Clean the Fish and make slits through the fish .
  • Grind the Chilly powder,Turmeric powder,garlic, ginger, shallot,Pepper powder and Salt.
  • Marinate the fish with the mix and keep aside for 20 minutes.
  • Fry the fish on both sides over a low fire.
Recommended Combination: Serve hot with Rice.


Chooda / Netholi Varuthathu



Chooda fry is made by marinating the Netholi and frying in oil.

INGREDIENTS:
  • Netholi/Chooda – 1 cup
  • Chilli powder – ¼ tsp
  • Pepper Powder - ½ tsp
  • Turmeric powder – ¼ tsp
  • Salt to taste
  • Oil for frying

PREPARATION METHOD:
  • Add Turmeric Powder,Chilly Powder, Pepper Powder and salt in fish and mix well.
  • Keep it aside for 10 minutes.
  • Heat Oil in a pan.
  • Put netholi into it and fry till it becomes crisp.
Recommended Combination: Serve hot with Rice



Ayala Varuthathu / Mackerel Fry



Mackerel or Ayala is a rich source of Omega-3 fatty acids and vitamins.
This fish can be used to make a Ayala Curry or can be Fried. The fish is marinated with masala and fried in oil.

INGREDIENTS:
  • Mackerel - 6 nos
  • Turmeric powder - ½ tsp
  • Chilly powder - 2 tsp
  • Salt to taste
  • Oil for frying

PREPARATION METHOD:
  • Clean the Fish and make diagonal slits through the fish .
  • Mix Chilly powder,Turmeric powder and Salt with little water.
  • Marinate the fish with the mix and keep aside for 15 minutes.
  • Fry the fish on both sides over a low fire.
Recommended Combination: Serve hot with Rice.

Aavoli Varuthathu / Pomfret / Butter fish Fry


Butterfish or Pomfret is popularly known as Aavoli in Kerala. It is marinated and fried in oil to make a tasty fry dish.

INGREDIENTS:
  • Butter Fish/ Avoli - 5 nos
  • Turmeric powder - ½ tsp
  • Chilly powder - 1 tbsp
  • Garlic pods -2 - 3 nos
  • Ginger - A small piece
  • Shallots - 2
  • Pepper powder - 1/4 tsp
  • Curry leaves
  • Salt to taste
  • Oil for frying

PREPARATION METHOD:

Beetroot Pachadi



Beet root Pachadi is typically made of cooked Beetroot and Green Chilles added in Coconut paste and Curd.

INGREDIENTS:
  • Finely Chopped Beetroot - 1 nos
  • Grated coconut - ¼ cup
  • Green chillies - 4 nos
  • Cumin seeds -¼ tsp
  • Curd - 1 cup
  • Turmeric powder - ¼ tsp
  • Water - ¼ cup
  • Fenugreek Powder- a pinch
  • Curry leaves - a few
  • Salt  to taste
  • Mustard seeds - 1 tsp 
  • Red chilly - 2 nos 
  • Coconut oil -1 tsp 

PREPARATION METHOD:
  • Grind the coconut and cumin seeds to a fine paste.
  • Cook chopped beetroot and green chilly in water along with salt and turmeric powder .
  • When the water almost dries up, add coconut paste into it.
  • When it starts boil,turn off the stove and allow to cool.
  • Add curd to the mixture and stir well.  
  • Heat oil in a pan.(optional)
  • Add mustrard seeds and red chillies into it, allow to splutter.
  • Add curry leaves.
  • Pour the seasoning over the pachadi.
  • Sprinkle fenugreek powder and mix well.

Recommended Combination: Serve with Rice.




Vendakka Mezhukkupuratti / Okra / Ladies finger Stir Fry



Okra is also known as lady's finger.It is an ideal vegetable for weight loss.The fiber of okra has many superior qualities in maintaining the health of the gastro-intestinal tract.
Okra Fry is made of Okra shallow fried in Oil.

INGREDIENTS:
  • Roundly sliced Okra -1 Cup
  • Chilly flakes  - ½ tsp
  • Turmeric powder -¼ tsp
  • Salt to taste
  • Oil - 3 tbs
PREPARATION METHOD:
  • Mix the Okra, turmeric powder and salt.
  • Heat Oil in a pan.
  • Put the Okra and chilly flakes into it.
  • Mix well.
  • Fry it until it becomes golden colour.
Recommended Combination: Serve with Rice.

Vazhuthananga Mezhukkupuratti / Brinjal Stir Fry


Brinjal Fry is a tasty dish.Brinjal is fried in Oil till it turns crisp and golden colour.

INGREDIENTS:
  • Diced brinjal / egg plant -  1 cup
  • Diced onion - 2 tsp
  • Turmeric powder - ¼ tsp
  • Red Chili powder - ½ tsp.
  • Salt – to taste
  • Oil - 2 tsp
  • curry leaves - a few

PREPARATION METHOD:
  • Mix brinjal / egg plant pieces with turmeric powder, red chili powder and salt.
  • Heat oil in a pan.
  • Add onion and saute for a minute.
  • Put brinjal and curry leaves into it and fry utill it turns to golden colour.
Recommended Combination: Serve hot with Rice.

Vazhakka Mezhukkupuratti / Raw Banana Stir Fry



Banana is cooked in little water and fried in Oil till it turns crisp and golden colour.

INGREDIENTS:
  • Raw Banana (cut into small slices) - 2 nos
  • Turmeric powder - ¼ tsp
  • Crushed Chilly - ¼ tsp
  • Mustard seeds - 1 tsp
  • Red chilly - 2 nos
  • Sliced Shallot - 1 tbsp
  • Curry leaves - A few
  • Salt – to taste
  • Oil - 1 tbsp

PREPARATION METHOD:
  • Cook the Banana with Turmeric powder and Salt in water.
  • Heat Oil in a pan.
  • Add mustrard seeds and red chillies into it, allow to splutter.
  • Add sliced shallot, curry leaves and fry it.
  • Put the cooked banana into it and crushed chilly, fry utill it turns to golden colour.
Recommended Combination: Serve hot with Rice.


Urulakizhangu Mezhukkupuratti / Potato Stir Fry



Potato is cooked in little water and fried in oil till it turns crisp and golden colour.

INGREDIENTS:
  • Chopped Potato -1 cup
  • Turmeric powder - ¼ tsp.
  • Red chili powder - ½ tsp.
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Potato in little water along with turmeric powder,chilli powder and salt.
  • Heat oil in a pan.
  • Put the cooked potato into it and fry utill it turns to golden colour.
Recommended Combination: Serve with Rice.


Soya Fry




Soybeans are sources of complete protein with all eight essential amino acids. soybeans are rich
in soluble fiber which helps to eliminate cholesterol from the body.
Soya Fry is gravy less dish.

INGREDIENTS:
  • Soya Bean chunks - 1 cup
  • Onion(finely chopped) - ½ cup
  • Onion(Slice lengthwise) - ¼ cup
  • Slit Green Chillies-4 nos
  • Red Chillies -3 nos
  • Ginger-garlic paste - 1 tsp
  • Chilly powder - 1 ½ tsp
  • Coriander powder - 2 tsp
  • Pepper powder - ½ tsp
  • Garam masala - ½ tsp
  • Turmeric powder - ¼ tsp
  • Mustard seeds - ½ tsp
  • Oil - ¼ cup
  • Water - 1/4 cup
  • Curry leaves
  • Salt - As reqd

PREPARATION METHOD:
  • Soak soya chunks or in hot water for 15 minutes.
  • Drain the chunks and put them in cold water.
  • Squeeze the chunks out of water and keep aside.
  • Cut each balls into 2 pieces.
  • Heat 3 tbsp of oil in a Pan.
  • Add onions, green Chillies, and saute well, till they turn transparent.
  • Add the ginger-garlic paste in to it and saute for sometime.
  • Add turmeric powder, chilly powder, coriander powder, pepper powder and garam masala and stir till raw smell goes .
  • Add Soya Chunks, Water and Salt in to it and allow to cook.
  • Cook well until the water dries up.
  • Heat the remaining oil in a pan.
  • Put Mustrard seeds and red chillies in to it and allow to Splutter.
  • Add Curry leaves.
  • Put the Sliced(lengthwise) Onion in to the oil and fry it.
  • Once the Onion turns brown add cooked Soya into it and stir well.
  • Soya and Onion get fried well in oil for few minutes.
Recommended Combination: Serve hot with Chappathi, Rice

Pavakka Mezhukkupuratti / Bitter Gourd Stir Fry



Pavakka, Green chilli, Coconut slices, Onion slices are cooked in little water and fried in oil till it turns crisp and golden colour

INGREDIENTS:
  • Bitter Gaurd(Roundly sliced)- 1 cup
  • Green chilies (slit)- 4 nos
  • Sliced Onions -¼ cup
  • Coconut slices -¼ cup.
  • Turmeric powder -¼ tsp.
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Pavakka in little water along with turmeric powder, Green chilli, Coconut slices, Onion slices and salt.
  • Heat oil in a pan.
  • Put the Pavakka into it and fry utill it turns to golden colour.
Recommended Combination: Serve with Rice.



Kovakka Mezhukkupuratti / Tindora Stir Fry



Kovakka is cooked in little water and fried in oil till it turns crisp and golden colour.

INGREDIENTS:
  • Kovkka/Tindora(Roundly Slice) -1 cup
  • Turmeric powder - ¼ tsp.
  • Crushed Chilly - ¼ tsp.
  • Salt to taste
  • Oil -2 tbsp
PREPARATION METHOD:
  • Cook Kovakka in little water along with turmeric powder and salt.
  • Heat oil in a pan.
  • Put the Kovakka,Crushed Chilly into it and fry utill it turns to golden colour.
Recommended Combination: Serve hot with Rice.

Chembu Mezhukkupuratti / Taro Root Stir Fry



Chembu(diced) is Cooked in little water and fried in Oil till it turns crisp and golden colour.

INGREDIENTS:
  • Diced Taro root/Chembu -1 cup
  • Turmeric powder - ¼ tsp.
  • Red chili powder - ½ tsp.
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Chembu in little water along with turmeric powder,chilli powder and salt.
  • Heat oil in a pan.
  • Put the Cooked Chembu into it and fry utill it turns to golden colour.
Recommended Combination: Serve hot with Rice.

Carrot Mezhukkupuratti / Carrot Stir Fry



INGREDIENTS:
  • Nicely sliced Carrot (length wise) - 3 nos
  • Turmeric powder - ¼ tsp.
  • Chilly flakes - ½ tsp.
  • Salt to taste
  • Oil -2 tsp

PREPARATION METHOD:
  • Mix sliced carrot with turmeric powder and Salt.
  • Heat oil in a pan.
  • Put the carrot and chilly flakes into it.
  • Cover the pan and let it cook for 2 mins in medium heat.
  • Remove the lid and fry the carrot utill it turns to golden colour.
Recommended Combination: Serve hot with Rice or chappathi.

Beans Mezhukkupuratti / Spring Beans Stir Fry



Beans are cooked in little water and fried in Oil till it turns crisp.

INGREDIENTS:
  • Beans(cut into small pieces) -1 cup
  • Turmeric powder - ¼ tsp.
  • Crushed chili  - ¼ tsp.
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Beans in little water along with turmeric powder and salt.
  • Heat oil in a pan.
  • Put the beans, Crushed Chilly into it and fry utill it turns golden colour.
Recommended Combination: Serve with Rice.

Achinga Payar Mezhukkupuratti / Long Beans Stir Fry


Long Beans is cooked in little water and fried in Oil till it turns crisp.

INGREDIENTS:
  • Long Beans(cut into small pieces) -1 cup
  • Turmeric powder - ¼ tsp.
  • Green Chilli(slit) - 4 nos
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Achinga Payar and green Chilii in little water along with turmeric powder and salt.
  • Heat oil in a pan.
  • Put the Payar into it and fry utill it turns crisp.
Recommended Combination: Serve hot with Rice.
