Oats Puttu / Oats Steam Cake


INGREDIENTS:
  • Oats - 2 cup 
  • Grated Coconut - ½ cup
  • Salt - to taste
  • Water - as required to make the powder wet.
PREPARATION METHOD:
  • Blend oats in a mixer to make it powder.
  • In a heavy  bottomed pan add the  powder, stir continuously and roast lightly for 5 minutes.
  • Allow the powder to cool.
  • Sprinkle water in to flour little at a time and mix the flour. 
  • Repeat sprinkling water till the flour is wet.
  • Blend the flour mix in a blender for a minute so that the flour mix becomes soft.
  • Place a pot shapped utensil  or a pressure cooker on the stove. 
  • Fill half the utensil with water and boil the water.
  • Place a puttu maker on the top of the utensil.
  • Now its time to put the flour mixture into the puttu maker.
  • Put a spoon full of  grated coconut first, then fill the flour mixture till the half of the maker.
  • Again a spoonful of coconut on it then fill it up with the flour mix .
  • Finally put a layer of  coconut on the top of it.
  • Steam in a vessel for 5-6 minutes and serve hot.

Recommended Combination: Oats Puttu can be served hot with Kadala curry / Payar Curry  / Pappadam

Beetroot Rice



INGREDIENTS:
  • Basmathi rice - 2 cup
  • Chopped Beetroot -1 cup
  • Chopped Onion– 1 nos
  • Green peas – ¼ cup
  • Chopped Green chili - 3 nos
  • Ginger Garlic paste - 1 tsp
  • Cinnamon -2 inch stick
  • Cloves- 2 nos
  • Cardamom - 2 nos
  • Salt to taste
  • Ghee or Oil- 1 tbsp
  • Raisins - 2 Tbsp
  • Cashewnut - 10 nos
  • Chopped corriander leaves

PREPARATION METHOD:
  • Heat ghee/oil in a pan.
  • Fry raisins and cashew nut and remove from the pan and keep aside.
  • Add onion, green chili, ginger garlic paste and saute.
  • Add chopped beetroot and saute for 2 -3 minutes.
  • Add greenpeas, salt and saute for a few minutes.
  • Heat 1 tsp of oil/ghee in a pan and fry cinnamon stick,  cardamom and  cloves.
  • Add rice into it and fry for a minute.
  • Add the vegetables in rice and mix it.
  • Add 4 cups of water and salt and cook the rice and vegetables in low flame.
  • Remove from fire and garnish the rice with fried nuts, raisins and chopped corriander leaves.


Recommended Combination: Serve with Pappadam/Chips and raita.

Cauliflower Mutta Thoran / Cauliflower Egg Stir fry



Combination of Egg and Cauliflower results in a delicious thoran.

INGREDIENTS:

  • Finely chopped Cauliflower- 1 cup
  • Onion(finely Chopped)- 1 nos
  • Green Chilly(roundly cut) - 3
  • Turmeric powder - ¼ tsp
  • Grated Coconut-¼ cup
  • Mustard seeds – ½ tsp
  • Red Chilly-2 nos
  • Egg - 3 nos
  • Salt – to taste
  • Oil - 2 tsp
  • Curry leaves- few


PREPARATION METHOD:

  • Cook Cauliflower in little water, Turmeric powder and Salt.
  • Beat the Eggs and keep aside.
  • Heat Oil in a pan and allow Mustard seeds and Red chilly to splutter.
  • Add Chopped Onion and Green Chilly and saute well.
  • When Onion turns transparent, add the beaten egg,  grated Coconut and salt and stir continuously.
  • Add Cooked Cauliflower along with Curry leaves  and saute well.
  • When the thoran becomes dry, remove from fire.

Recommended Combination: Serve with Rice / Chappathi / Dosa.

Nei Choru / Ghee Rice



Nei Choru or Ghee rice is popular in kerala, in northern part. The taste of ghee and spices in this rice is equally enjoyed by kids and adults.

INGREDIENTS:
  • Basmati rice - 2 cups
  • Sliced Onions - 1 small 
  • Cloves -4
  • Cardamom -4 
  • Cinnamon -2 inch long 
  • Ghee - 4 tbsp
  • Cashewnut - 12 nos
  • Raisins - 2 tbsp
  • Thinly sliced Onion - 1 small(for garnishing)
  • Salt to taste
  • Water- 4 cups

PREPARATION METHOD:
  • Wash the rice and drain it.
  • Heat 1 tbsp ghee in a pan 
  • Fry cashews and raisins and keep it aside.
  • Add 1 tbsp Ghee and fry the thinly sliced onions(for garnishing) until golden brown and remove it.
  • Add the remaining Ghee in the same pan and saute all the spices for 2 minutes.
  • Add sliced onions and saute the onion until translucent.
  • Add the drained rice to the pan .
  • Stir continuously and fry for 3-4 minutes.
  • Add water and salt to the pan.
  • Cover the pan with a lid and let it cook.
  • Remove from the fire when the rice is cooked and all water has been absorbed .
  • Garnish the rice with fried Onion, Cashewnut and raisins.

Recommended Combination: Serve hot with Chicken Curry / pickle.

Vellayappam / Rice Pan Cake



Vellayappam / Kallappam is a sort of pancake prepared using grinded rice and coconut fermented with yeast or toddy (Kallu).

INGREDIENTS:
  • Rice – 1 cup 
  • Cooked rice – 2 tbsp 
  • Grated coconut – 1 ½ cup or coconut milk -½ cup 
  • Yeast -¼ tsp 
  • Sugar -2 tbsp 
  • Salt - As reqd

PREPARATION METHOD:
  • Soak rice for atleast 4 hrs 
  • Make a batter of rice, coconut( or coconut milk)and cooked rice(idli batter consistency) 
  • Add yeast and sugar to warm water and dissolve. 
  • Add this to the batter and keep for about 6 hrs. 
  • Before making appam, add salt and little sugar. 
  • Heat a Dosa Pan(Dosa kallu). 
  • Spread some oil on the it.
  • Pour a spoonful batter on the pan.
  • Spread the batter to form a small circle.
  • When one side is golden brown, turn the other side .
Recommended Combination: Vellayappam can be served hot with Chicken Curry / Vegetable Stew / Vegetable Kurma / Chicken Kurma / Kadala Curry

Vattayappam / Rice Cake


Vattayappam or Rice Cake is a main item in Kerala.
Rice - Coconut batter cooked in steam to prepare this item.

INGREDIENTS:
  • Raw rice flour -1 cups
  • Grated Coconut - 1 ½ cup
  • Cumin Seed - pinch
  • Cream of Rice (thari)/Rava- 1 tbsp
  • Ghee- ½ tsp
  • Yeast -½ tsp
  • Sugar- 5 tbsp
  • Salt - ¼ tsp 
  • Water

PREPARATION METHOD:
  • Lightly roast rice flour about 3 minutes.
  • Mix yeast with sugar in 5 Tbsp warm water and keep aside.
  • Grind Coconut and cumin seed to a fine paste.
  • Cook the cream of rice in little water by stirring continuously.
  • Mix rice flour, cooked cream of rice and yeast and knead into a soft dough. 
  • Add the coconut paste mix to the dough with little water and mix well. 
  • Add Salt and mix well to make a thick batter.
  • Grease ghee in a pan (steel plate) and pour the batter into it.
  • Steam it well in an idli steamer for 15 minutes.
  • Remove it from the steamer. 
  • Let it cool for sometime and remove from the pan.
Recommended Combination: Vattayappam / Rice Cake can be served hot with Chicken Curry / Chicken Stew / vegetable Kurma / Chicken Kurma / Kadala Curry

Gothambu Puttu / Wheat Puttu



Gothambu Puttu / Wheat Steam Cake is a different variety of Puttu.
Use Roasted Wheat flour instead of Rice Flour which is used to prepare regular Rice puttu.

INGREDIENTS:
  • Roasted wheat flour -1 cup 
  • Grated Coconut -¼ cup
  • Salt - to taste
  • Water- as required to make the powder wet .
  • Puttu kudam (puttu maker)

PREPARATION METHOD:
  • Add salt to the roasted flour gently to make a mixture.
  • Sprinkle water in to flour little at a time and mix the flour. 
  • Repeat sprinkling water till the flour is wet.
  • Place a pot shapped utensil on the stove. 
  • Fill half the utensil with water and boil the water.
  • Place a puttu maker on the top of the utensil .
  • Put some grated coconut in it, and fill puttu maker with the mixture and put some grated coconut on the top .
  • Steam in a vessel for 10 minutes and serve hot
Recommended Combination: Gothambu Puttu can be served hot with Kadala curry / Payar Curry / Pazham / Pappadam

Crispy Rava Dosa



This preparation of Dosa uses Rava batter instead of Rice batter.

INGREDIENTS:
  • Rava - 1 cups
  • Rice flour -¼ cup
  • Maida /All-purpose flour- ¼ cup
  • Cumin seeds - ½ tsp
  • Finely chopped Ginger- 1 tsp
  • Finely chopped green chillies - 1 tsp
  • Curry leaves - few
  • Sesame Oil
  • Salt to taste
  • Water - 3 cups

PREPARATION METHOD:
  • Mix Rava, Rice flour, Maida, Cumin seed, Ginger, Green Chilly, Curry leaves, Salt and Water to make a dosa batter keep it aside for 30 minutes.
  • Heat a Frying Pan.
  • Take one Spoonful of batter and spread on the Pan starting from the Outside and finishing off in the middle.
  • Pour some sesame oil on dosa.
  • Turn the other side and cook both sides well.
Recommended Combination: Serve hot with Chutney.



Parippu Dosa



Parippu dosa is one amongst the different flavours of Dosa's a popular south Indian dish. A spicy combination with added grains.

INGREDIENTS:
  • RawRice - 1 cups
  • Parboiled rice - 1 cup
  • Urad Daal - ½ cup
  • Toor daal- ¼ cup
  • Channa daal-¼ cup
  • Fenugreek - 1 tsp
  • Asafoetida -¼ tsp
  • Red chilly -6 nos
  • Finely chopped pearl onion - 6 nos
  • Curry leaves
  • Water - as required
  • Salt to taste

PREPARATION METHOD:
  • Soak rice, Toor daal, Channa daal, Urad daal, Red chilly and fenugreek for 5 hours. 
  • Grind these with water.
  • Add asafoetida, chopped onion, curry leaves and salt and stir well.
  • Keep it for 2 hrs. 
  • Pour one spoon full of batter on a frying pan as thin as possible.
  • Pour some oil on it.
  • When one side is golden brown and turn the other side .
Recommended Combination: Serve hot with Tomato chutney / Coconut chutney/ Sambar


Tomato Uthappam



Uthappams are one of the South Indian breakfast. It can be make with left over idli or dosa batter.
Tomato Uttapam is usually made with chopped Onion,Tomato,Chilli.

INGREDIENTS:
  • Dosa batter - 1 cup
  • Sliced Onion - 1 nos
  • Sliced Tomato- 2 nos
  • Finely chopped Green chillies -4nos
  • Finely chopped Curry leaves / Corriander leaves -1 tbsp
  • Gingely Oil
  • Salt to taste

PREPARATION METHOD:
  • Heat  a frying pan and smear some oil.
  • Spread a spoonful of the batter to a heated frying pan.
  • Sprinkle few onions, green chilly, tomato and curry leaves / corriander leaves on top of the batter.
  • When the base is golden brown, turn the other side and cook well.
Recommended Combination: Serve hot with Chutney.


Poori



Poori is made from a dough of Wheat flour, Water and Salt by rolling it out into discs and
deep frying it in ghee or vegetable oil.Puri is often served potato masala.

INGREDIENTS:
  • Wheat Flour - 1 cup
  • Water to make dough
  • Salt to taste
  • Oil for deep frying

PREPARATION METHOD:
  • Mix Salt and Flour.
  • Slowly add warm water
  • Knead the dough with hands gently until it becomes soft and keep aside for 30 minutes.
  • Make the dough into small balls.
  • Roll out the dough in to small rounds.
  • Heat Oil in a Pan.
  • Fry the puri one at a time.
  • Turn each side and fry till light brown
Recommended Combination: Serve hot with Potato Masala, Podimas, Parippu, Vegetable Curry, Egg Curry, Chicken Curry.

Paalappam / Appam.



Appam made with ground soaked rice and cooked rice, mixed to a batter with coconut milk and water then left in a warm place to ferment for a number of hours. Appam is thin and crisp round the edges and fluffy and thick in the centre.

INGREDIENTS:
  • Raw rice – 1 cup
  • Cooked rice(parboiled) – 2 tbsp
  • Scraped coconut – ½ or coconut milk -½ cup
  • Yeast -¼ tsp
  • Sugar -1 tbsp
  • Salt - As reqd

PREPARATION METHOD:
  • Soak rice for atleast 4 hrs
  • Make a batter of rice, coconut( or coconut milk)and cooked rice(batter should not be too watery)
  • Add yeast and sugar to warm water and dissolve.
  • Add this to the batter and keep for about 6 hrs.
  • Before making appams, add salt and little sugar.
  • Heat a Pan(Appachatti).
  • Pour a spoonful batter into the appa chatti and rotate the Chatti.
  • Cover the pan and cook in medium flame till the edges of the Appam turn golden colour..
Recommended combination: Serve hot with Egg Roast or Stew or Chicken Curry.

Idli



Idli is a popular food throughout South India.
Idli is a fermented food which is prepared by steaming fermented black gram (Urad Daal) and rice batter. It makes an important contribution to the diet as a source of protein, calories and vitamins, especially B-complex vitamins, compared to the raw unfermented ingredients.

INGREDIENTS:
  • RawRice -2 cups
  • Urad Daal - 1 cup
  • Water - as required
  • Salt - 1 tsp

PREPARATION METHOD:
  • Soak rice and Urad daal separately for 5 hours.
  • Nicely grind rice and Urad daal separately in water.
  • Mix together rice, daal and salt.
  • Keep it overnight to ferment.
  • Spread oil on the idli mould.
  • Pour the batter in the mould .
  • Steam the vessel for about 8- 10 minutes.
Recommended Combination: Serve hot with Sambar or Chutney.

Rava puttu / Semolina Steam Cake



Yet another flavour of the deliciuos Malayalee breakfast. The main ingredient is Rava, otherwise known as Semolina. The preparation method is similar to Rice Puttu.

IINGREDIENTS:
  • Roasted Rava -1 cup 
  • Grated Coconut -¼ cup
  • Salt - to taste
  • Water- as required to make the powder wet .
  • Chiratta/ Chirattu Puttu mould

PREPARATION METHOD:
  • Add salt to the roasted Rava gently to make a mixture.
  • Sprinkle water on the Rava, little at a time and mix the flour.
  • Repeat sprinkling water till the flour is wet.
  • Place a pot shapped utensil on the stove. 
  • Fill half the utensil with water and boil the water.
  • Put a hole in the coconut shell (chiratta) and place it on the top of the utensil .
  • Put some grated coconut in it, and fill the shell with the flour and put some grated coconut on the top .
  • Steam in a vessel for 10 minutes and serve hot.
Recommended Combination: Serve hot with Kadala Curry / Pazham /Pappadam.

Chiratta Puttu / Rice Steam Cake



Puttu is a speciality of kerala cuisine and a favourite breakfast of keralites.This is considered as a healthier breakfast .It is rich in Nutrients & Vitamins.
Puttu is made of Rice Flour and Grated Coconut in steam.

INGREDIENTS:
  • Raw rice flour -1 cup
  • Grated Coconut -¼ cup
  • Salt - to taste
  • Water- as required
  • Coconut Shell or Chiratta

PREPARATION METHOD:
  • In a pan, add rice flour and dry roast lightly. Stirring continuously. The white color of the rice flour should change very lightly.
  • Allow the powder to cool.
  • Add salt to the roasted flour gently to make a mixture.
  • Sprinkle water on the rice flour, little at a time and mix the flour.
  • Repeat sprinkling water till the flour is wet.
  • Place a pot shapped utensil on the stove. Fill half the utensil with water and allow to boil .
  • Put a hole in the coconut shell (chiratta) and place it on the top of the utensil .
  • Put some grated coconut in it, and fill the shell with the mixture and put some grated coconut on the top .
  • Steam in a vessel for 10 minutes and serve hot.
Recommended Combination: Serve hot with Pazham, Payar and Pappadam , Kadala Curry


Battura



Battura is made of Allpurpose flour, Curd, Sugar knead to make a soft dough and deep fried in oil.

INGREDIENTS:
  • All Purpose flour/ Maida - 2 cup
  • Baking powder - pinch
  • Sugar - ½ tsp
  • Rava / Semolina - ¼ cup
  • Curd / Yogurt- 3/4 cup
  • Oil -for frying
  • Salt to taste

PREPARATION METHOD:
  • Mix Flour, Salt, Baking Powder and Sugar.
  • Add Rava/ Semolina and Curd to it and mix well.
  • Knead flour mix into a soft dough by adding little water.
  • Cover the dough with a wet cloth and keep aside for 2 hours.
  • Make the dough into Small balls and roll into a flat round shaped Battura.
  • Heat Oil in a pan.
  • Fry Battura till it turns golden brown on both sides.
Recommended Combination: Serve hot with Channa Masala

Egg Fried Rice



Fried rice is a popular food which comes in a variety of flavours.
One of them is Egg Fried Rice, which is prepared by mixing scrambled egg and Vegetables in rice.

INGREDIENTS:
  • Basmati rice - 2 cup
  • Eggs - 3 nos
  • Thinly sliced carrot, string beans, cabbage  - 1 cup
  • Thinly sliced onion – 1 small
  • Thinly sliced capsicum - ¼ cup
  • Green peas- ¼ cup
  • Thinly sliced garlic – 1 tsp
  • Pepper powder - 1½ tsp
  • Soy sauce - 1 tsp
  • Olive oil / vegetable oil
  • Salt to taste
  • Chopped green onion

PREPARATION METHOD:
  • Cook the rice and let it cool.
  • Beat the eggs with a pinch of salt.
  • Heat oil in a pan, add 1 tsp onion and saute well.
  • When the onion turns pink colour add beaten egg stir well.
  • Sprinkle ½ tsp pepper powder into the scrambled egg, mix well and keep aside.
  • Heat oil in a pan and add onion, garlic  and saute well.
  • Add all the vegetables and sauté it for 2 minutes.
  • When the vegetables are cooked add salt and 1 tsp pepper powder.
  • Finally add cooked rice, soy sauce, scrambled eggs and mix well.
  • Remove from fire and garnish with chopped green onion.

Vegetable Pulav





Vegetable Pulavu is prepared by cooking  fresh cut vegetables together with rice and spices.

INGREDIENTS:
  • Basmathi rice - 2 cup
  • Chopped Carrot,Green beans and peas -1 cup
  • Chopped Onion– 1 nos
  • Diced Potato – ¼ cup
  • Chopped Green chili - 3 nos
  • Ginger Garlic paste - 1 tsp
  • Cinnamon -2 inch stick
  • Cloves- 2 nos
  • Cardamom - 2 nos
  • Salt to taste
  • Ghee or Oil- 1 tbsp

PREPARATION METHOD:
  • Heat Ghee/Oil in a Pan.
  • Add Onion, Green Chili, Ginger Garlic paste and saute.
  • Add Potatao and saute for 2 -3 minutes.
  • Add chopped vegetables and saute for a few minutes.
  • Heat 1 tsp of oil/Ghee in a pan and fry Cinnamon Stick,  Cardamom and  cloves.
  • Add Rice into it and fry for a minute.
  • Add the Vegetables in Rice and mix it.
  • Add 4 cups of water and Salt and cook the rice and Vegetables in low flame.
Recommended Combination: Serve hot with Pappadam/Chips and Raita.

Vegetable Fried rice is a healthy food.

INGREDIENTS:
  • Basmati rice - 2 cup
  • Thinly sliced carrot, string beans, cabbage  - 1 cup
  • Thinly sliced onion – 1 small
  • Thinly sliced capsicum - ¼ cup
  • Green peas- ¼ cup
  • Thinly sliced garlic – 1 tsp
  • Pepper powder - 1 tsp
  • Soy sauce - 1 tsp
  • Olive oil / oil- 1 tbsp
  • Salt to taste
  • Chopped green onion

PREPARATION METHOD:
  • Cook the rice and let it cool.
  • Heat oil in a pan.
  • Add onion, garlic and saute well, till onion turns transparent.
  • Add all the vegetables and saute till they become soft.
  • Add salt and pepper powder into it and saute for a minute.
  • Add soy sauce and saute for a minute.
  • Add the rice and mix with vegetables .

Tomato Rice



Tomato rice is a South Indian food.
It is a variety prepartion of rice with rich tomato flavour.

INGREDIENTS:
  • Basmati Rice – 1 cup
  • Tomatoes(Chopped) – 4 nos
  • Onion(Chopped) – 1 nos
  • Chopped Garlic - ½ tsp
  • Chopped Ginger - ½ tsp
  • Chopped Green Chillis – 1 nos
  • Turmeric Powder -¼ tsp
  • Asafoetida powder - ¼ tsp
  • Fenugreek powder - ¼ tsp
  • Mustard seeds – 1 tsp
  • Urud Dal – 1 tbsp
  • Chana dal - 1 tbsp
  • Broken cashew nut - 2 tbsp
  • Gingely Oil - 2  - 3 tbsp
  • Salt to taste
  • Chopped corriander leaves - 1 tbsp
  • Curry leaves – few

PREPARATION METHOD:
  • Cook rice and let it cool.
  • Heat 1 tsp gingely oil in a Pan.
  • Add onions, ginger and garlic, green chilly and saute`till the onion turns transparent.
  • Add chopped tomatoes, chilly powder and saute well .
  • Add salt and mix well.
  • Let it cook till the tomato becomes soft.
  • Remove from fire and let it cool.
  • Grind them into a paste.
  • Heat 2 tbsp oil in a pan.
  • Add the tomato paste and corriander leaves into it and mix well.
  • Let it cook until the oil seperates from the paste.
  • Add the cooked rice and salt into it and mix well.
  • Let it cook for a minute and remove from the fire.
  • Heat the remaining oil in a Pan.
  • Add mustard seeds and red chilly, let it splutter.
  • Add cumin seed, chana dal, urad dal and cashew nut and fry it.
  • Add asafoetida, fenugreek powder and curry leaves .
  • Add the cooked tomato rice into it and mix well.
  • Remove from fire and serve.
Recommended Combination: Serve with Pappadam/Chips and raita.
