Potato Bajji



 It is an easy to prepare Tea time snack. It is prepared by dipping the Potato in the batter and deep frying it.

INGREDIENTS:
  • Potato -2 nos
  • Gram Flour (besan)- ½ cup
  • Maida - 1 tbsp
  • Rice Flour -2 tbsp
  • Chilly Powder - ½ tsp
  • Asafoetida Powder - ¼ tsp
  • Baking soda - pinch (optional)
  • Salt to taste
  • Oil - for frying
  • Water- required to make batter

PREPARATION METHOD:
  • Mix the rice flour, maida, red chilli powder, asafoetida powder, salt to gram flour and mix well.(you can add baking soda to the flour if needed)
  • Add water to the flour mixture and make a smooth thick batter.
  • Heat Oil in a pan. 
  • Peel off the Potato skin and make thin slices of it.
  • Dip each slice into the batter and put into the hot oil.
  • Fry till both the sides turn golden brown. 

Recommended Combination: Serve hot with Tea or Coffee.

Ishtu



This is a simple delicious dish, popular in a traditional Kerala Sadya, which can be served on its own with Appam or Chappathi.

INGREDIENTS:
  • Diced Onion -1 nos
  • Diced Potato - 2 nos
  • Green Chilly(Slit) - 6 nos
  • Ginger(chopped) -1 tbsp
  • Thick Coconut milk - ½ cup
  • Coconut Oil - 1tsp
  • Curry leaves - few
  • Salt to taste

PREPARATION METHOD:
  • Cook Onion, Potato, Chilly and Ginger along with salt and water.
  • When the vegetables cooks well, add Coconut milk and let it boil.
  • When it starts boil,turn off the stove and add Curry leaves and coconut Oil
Recommended Combination: Serve hot with Rice/ Appam/ Chappathi

Vegetable Cutlet


Vegetable Cutlet is made using mashed potatoes, and mixed vegetables fried in oil with a layering of bread crumps. This is easy to cook and very tasty tea time snack.

INGREDIENTS:
  • Potato (large) - 2 nos
  • Chopped Vegetables (Carrot, Beans, Green Peas) - ½ Cup
  • Chopped Onion - 1 cup
  • Bread Crumps - 2 cup
  • Ginger Paste - 1 tsp
  • Garlic paste - 1tsp
  • Garam Masala Powder - ¼ tsp
  • Chilly Powder - ¼ tsp
  • Corriander Powder - ¼ tsp
  • Turmeric Powder - ¼ tsp
  • Maida - 2 tbsp
  • Salt - To Taste
  • Oil - For Frying

PREPARATION METHOD:
  • Cook Potato, peel the skin and mash it well.
  • Steam Chopped vegetables for 2-3 minutes.
  • Heat 1 tbsp oil in a pan.
  • Put Chopped Onion, Ginger paste and saute well.
  • Put Chilly Powder, Corriander Powder, Turmeric Powder, Garam Masala Powder and saute for a mintute.
  • Add Steamed vegetables, Salt and mix well.
  • Remove from fire after a minute.
  • Mix Mashed Potato with the sauted mix well.
  • Make small balls from this mix and flatten them.
  • Heat oil in a pan.
  • Mix little water with Maida in a bowl.
  • Dip the flattened patties in it and roll them in bread crumps.
  • Slide each of the pattiesin to hot Oil and fry them till it turns golden brown on both sides.
Recommended Combination: Serve hot with Tomato Sauce


Urulakizhangu Mezhukkupuratti / Potato Stir Fry



Potato is cooked in little water and fried in oil till it turns crisp and golden colour.

INGREDIENTS:
  • Chopped Potato -1 cup
  • Turmeric powder - ¼ tsp.
  • Red chili powder - ½ tsp.
  • Salt to taste
  • Oil -2 tbsp

PREPARATION METHOD:
  • Cook Potato in little water along with turmeric powder,chilli powder and salt.
  • Heat oil in a pan.
  • Put the cooked potato into it and fry utill it turns to golden colour.
Recommended Combination: Serve with Rice.


Podimas




Potato podimas is a famous Indian dish.It is good for health.Potatoes are an excellent source of carbohydrates, the body's best energy source.Potatoes are fat free, cholesterol free, sodium free and saturated fat free.
It is a simple, gravy-less dish that doesn’t require much oil.

INGREDIENTS:
  • Potato - 4 nos
  • Sliced Onion(length wise)- 1 nos
  • Slit Green chillies - 5 nos
  • Turmeric powder - ¼ tsp
  • Black gram(Uzhunnuparippu) - ½ tsp
  • Bengal gram(Kadalaparippu) - ½ tsp
  • Mustard seeds - ¼ tsp
  • Red chillies- 2 - 3 nos
  • Curry leaves - A few
  • Oil - 2 tbsp
  • Water- ¼ cup
  • Salt - as required

PREPARATION METHOD:
  • Boil potatoes ,Peel skin and mash them and keep it aside.
  • Heat oil in a pan .
  • Put Mustrard seeds and red chillies and allow to Splutter
  • Fry black gram, Bengal gram, curry leaves,.
  • Add sliced onion and green chillies and saute well till it turns transparent.
  • Add water,salt,turmeric powder and let it boil.
  • Add the mashed potatoes and mix well.
  • Cook it for a few mins until the water dries up.
Recommended Combination: Serve hot with Chappathi





Urulakizhangu Thoran / Potato Thoran



Potato thoran is a tasty dish. It is easy to make.
Potato,Onion and Grated Coconut are the main ingredients for this thoran.

INGREDIENTS:
  • Diced Potato - 1 ½ cups
  • Diced Onion- ½ cup
  • Grated Coconut - 3/4 cup
  • Chilly Powder - 1 tsp
  • Corriander Powder - ½ tsp
  • Aniseed Powder -½ tsp
  • Turmeric powder - ¼ tsp
  • Red Chilly - 2 nos
  • Mustard seeds - 1 tsp
  • Black gram -1 tsp
  • Salt - to taste
  • Oil - 1 tsp
  • Curry leaves - few


PREPARATION METHOD:
  • Cook Potato and Onion with Turmeric powder, Chilly Powder, Corriander Powder, Aniseed Powder and Salt in water.
  • Add grated coconut to the cooked Potato and mix it well.
  • Heat oil in a pan.
  • Add Mustard seeds and Red chilly and let it splutter.
  • Add Black gram and fry it.
  • Once Black gram becomes brown add Cooked Potato and Curry leaves.
  • Stir well and slow down the flame and cook it for 2 mins.
Recommended Combination: Serve hot with Rice.

Potato Stew



Potato stew is a Kerala dish, that goes well with Appam and Idiyappam. It is very simple and easy to make.

INGREDIENTS:
  • Diced Potatoes - 1 cup
  • Diced Onions - ½ cup
  • Green chilly(Slit) - 3 nos
  • Chily powder-½ tsp
  • Corriander Powder-½ tsp
  • Perimjeerakam Powder- ½ tsp
  • Turmeric powder- ¼ tsp
  • Thick Coconut milk- ½ cup
  • Coconut oil - 1 tsp
  • Water -1 cup
  • Salt - As reqd
  • Curry leaves

PREPARATION METHOD:
  • Cook Potato, Onion and Green Chilly with Chily powder, Corriander Powder, Turmeric powder, Perimjeerakam Powder, salt and Water.
  • When it Cooks, add coconut milk and reduce the flame.
  • When it starts bubbling turn off the fire.
  • Add curry leaves and Coconut Oil.
Recommended Combination: Serve hot with Appam, Idiyappam
