Cabbage Carrot Thoran



INGREDIENTS:
  • Finely chopped Cabbage – 1 cup
  • Grated carrot - 1 cup
  • Finely chopped Onion – 1 no
  • Roundly cut Green Chillies - 6 nos
  • Grated Coconut –  1 cup
  • Turmeric powder - 1/2 tsp
  • Coconut oil - 1 tsp
  • Mustard seeds - 1 tsp
  • Red chillies - 2 nos
  • Curry leaves - A few
  • Salt-to taste

PREPARATION METHOD:
  • Heat oil in a pan.
  • Add mustard seeds and red Chillies, allow to splutter.
  • Add onions and green chillies , sauté until transparent.
  • Add curry leaves.
  • Add cabbage and carrot into it.
  • Add turmeric powder and salt.
  • Mix well, cover the pan with a lid and let it cook for 5 minutes.
  • Add grated coconut in to it.
  • Slow down the flame and let it cook for 2mins .
Recommended Combination: Serve hot with Rice.

Green Peas Thoran / Green Peas Stir fry



INGREDIENTS:
  • Dried Green peas - 1 cup
  • Green Chilly (slit) - 3 nos
  • Chopped Onion - 2 tbsp
  • Grated Coconut - 1 cup
  • Turmeric powder - ¼ tsp
  • Chilly powder - ½  tsp 
  • Cumin seeds- pinch
  • Garlic pods - 1 nos 
  • Mustard seeds - 1 tsp
  • Red Chilly- 2 nos
  • Curry leaves - 1 stem
  • Coconut Oil - 1 tbsp 
  • Salt to taste
  • PREPARATION METHOD:
  • Soak dried green peas in water for 6 hour. 
  • Wash the soaked peas.
  • Add salt, green chilly, turmeric powder and water to the soaked peas.
  • Cook well until the water dries up. 
  • Mix coconut, cumin seed, chilly powder and garlic and crush it well.
  • Heat oil in a pan.
  • Add mustard seeds, red chilli and let it splutter.
  • Add chopped onion and saute it till translucent.
  • Add crushed coconut mix, curry leaves and cooked peas into it and mix well.
  • Saute it for a minute and remove from the fire.
  • Recommended Combination: Serve hot with Rice / Chappathi / Dosa

Muthira Thoran / Horse Gram Stir Fry




INGREDIENTS:
  • Horse Gram / Muthira - 1 cup 
  • Grated coconut - 3/4 cup 
  • Cumin seeds- pinch
  • Garlic pods - 2 nos 
  • Turmeric powder - ¼ tsp 
  • Chilly powder - ½ tsp 
  • Pepper Powder - ½ tsp
  • Coconut Oil - 1 tbsp 
  • Curry leaves - A few
  • Salt to taste

PREPARATION METHOD:
  • Cook Muthira / Horse Gram in a Pressure cooker with Turmeric Powder and Water for 3 -4 whistle. 
  • Crush Coconut, Cumin seed, Chilly Powder, Pepper Powder and Garlic. 
  • Add the Coconut Mix to the cooked Gram / Muuthira and mix well. 
  • Add Curry leaves and Coconut Oil and stir for a minute and remove from fire.
Recommended Combination: It can be served with Rice / Chappathi.

Cheera Thoran / Spinach Stir fry



Cheera / Spinach Thoran is a simple and nutritious dish which is good for health.

INGREDIENTS:

  • Finely Chopped Red Spinach (chuvanna cheera) - 2cups
  • Grated coconut - ½ Cup
  • Chilly Powder - ½ tsp
  • Red Chilly -2 nos
  • Rice - 1 tsp
  • Garlic - 1 nos
  • Turmeric powder - ¼ tsp
  • Mustard seeds - 1 tsp
  • Oil - as needed
  • Salt - to taste


PREPARATION METHOD:

  • Heat Oil in a pan.
  • Add Mustard seeds and Red chilli and let it splutter.
  • Add Rice and fry it.
  • Once rice becomes crispy add Spinach / Cheera,salt,turmeric powder.
  • Cover the pan and cook for 2 mins.
  • Crush Coconut,Garlic and chilly powder and add to it.
  • Mix well and slow down the flame and stir well till the water dries up completely.
  • Remove from fire.

Recommended Combination: Serve hot with Rice.

Carrot Cherupayar Thoran / Carrot Green Gram Stir Fry



Carrot and Green gram are good for health. The combination of these two results in a delicious and nutritious dish also.

INGREDIENTS:

  • Finely chopped Carrot – ½ cup
  • Finely chopped Onion – 3 tbsp
  • Roundly cut Green Chillies - 6 nos
  • Grated Coconut – ½ cup
  • Turmeric powder - ½ tsp
  • Moong Daal / Cherupayar - ½ cup
  • Cumin seeds- pinch
  • Garlic - 1 nos
  • Chilly powder - ½ tsp
  • Mustard seeds - ½ tsp
  • Red chillies - 2 nos
  • Coconut Oil - 1 tbsp
  • Curry leaves - A few
  • Salt to taste
PREPARATION METHOD:
  • Cook Moong Daal/ Cherupayar in a Pressure cooker with Turmeric Powder and Water for 3 -4 whistle.
  • Crush Coconut, Cumin seed, Chilly Powder and Garlic.
  • Heat oil in a pan.
  • Add mustard seeds and Red Chillies, allow to splutter.
  • Add Onions and Green chillies , sauté until transparent.
  • Add carrot into it.
  • Add turmeric powder,little water and salt.
  • Slow down the flame and cover the pan and let it cook for 5 -7 mins .
  • Add Cooked Beans/ Moong Daal to it and mix well.
  • Cook Carrot and Beans together for 2 - 3 minutes.
  • Add the crushed Coconut and mix well.
  • Add Curry leaves and stir for 2 minutes and remove from fire.

Vendakka Thoran / Okra Stir Fry




Okra / Ladies Finger is an ideal vegetable for weight loss.The fiber of okra has many superior qualities in maintaining the health of the gastro-intestinal tract.
Vendakka Thoran / Okra Stir Fry is a delicious thoran which can be served with rice.

INGREDIENTS:
  • Chopped Vendakka/ Ladies Finger / Okra- 1 cup
  • Green Chilly (slit) - 2 nos
  • Chopped Onion - 2 tbsp
  • Grated Coconut - ¼ cup
  • Curry leaves - 1 stem
  • Turmeric powder - ¼ tsp
  • Red Chilly- 2 nos
  • Mustard seeds - 1 tsp
  • Oil - 1 tsp
  • Salt - As required

PREPARATION METHOD:
  • Heat Oil in a pan.
  • Add Mustard seeds and Red Chilli and let it splutter.
  • Add Chopped Onion and saute till translucent.
  • Add chopped Okra and Green Chilli and saute it.
  • Add Salt and Turmeric powder to it.
  • Stir well and slow down the flame and let it cook.
  • When Okra is cooked well add grated coconut and curry leaves.
  • Stir for 2 minutes and remove from fire.
Recommended Combination: Serve hot with Rice

Beetroot Cherupayar Thoran / Beetroot Moong daal Stir Fry





Beetroot Cherupayar thoran is a nutritious thoran.

INGREDIENTS:

  • Finely chopped Beetroot – ½ cup
  • Moong Daal / Cherupayar - ½ cup
  • Finely chopped Onion – 3 tbsp
  • Roundly cut Green Chillies - 2 nos
  • Grated Coconut – 1 cup
  • Turmeric powder - ½ tsp
  • Cumin seeds- pinch
  • Garlic - 1 nos
  • Chilly powder - ½ tsp
  • Mustard seeds - ½ tsp
  • Red chillies - 2 nos
  • Coconut Oil - 1 tsp
  • Curry leaves - A few
  • Salt to taste


PREPARATION METHOD:

  • Cook Moong Daal/ Cherupayar in a Pressure cooker with Turmeric Powder and Water for 3 -4 whistle.
  • Crush Coconut, Cumin seed, Chilly Powder and Garlic.
  • Heat oil in a pan.

  • Add beetroot into it.
  • Add turmeric powder,little water and salt.

  • Add the crushed Coconut and mix well.
  • Add Curry leaves and stir for 2 minutes and remove from fire.

Amarapayar Carrot Thoran / Gour Beans and Carrot Stir Fry




Cluster beans / Gour Beans / Amarakka have several health benefits. Gour Beans contains Vitamins, folate, iron and potassium. Cluster beans are rich in the protein and fiber which regulate the bowel movements and relieve constipation.

cluster beans have a little bitter taste, but the sweetness of carrot and the bitter taste of beans gives this thoran a delicious taste.

INGREDIENTS:
  • Finely chopped Carrot- ½ cup
  • Finely chopped Amarapayar / Gour Beans - ½ cup
  • Roundly cut Green chillies - 6 nos
  • Finely chopped Onion - ½ cup
  • Grated Coconut - 1 cup
  • Turmeric powder - ¼ tsp
  • Oil - 1 tsp
  • Red Chilly- 2 nos
  • Mustard seeds - 1 tsp
  • Curry leaves - 1 stem
  • Salt - As required

PREPARATION METHOD:
  • Cook Carrot, Onion, Amara Payar / Gour Beans and Green Chilly with turmeric powder and salt in little Water.
  • Add Grated coconut and mix well.
  • Heat Oil in a pan.
  • Add Mustard seeds and Red Chilli and let it splutter.
  • Add Cooked Vegetables and Curry leaves.
  • Stir well and slow down the flame and cook it for 2 mins.

Cauliflower Mutta Thoran / Cauliflower Egg Stir fry



Combination of Egg and Cauliflower results in a delicious thoran.

INGREDIENTS:

  • Finely chopped Cauliflower- 1 cup
  • Onion(finely Chopped)- 1 nos
  • Green Chilly(roundly cut) - 3
  • Turmeric powder - ¼ tsp
  • Grated Coconut-¼ cup
  • Mustard seeds – ½ tsp
  • Red Chilly-2 nos
  • Egg - 3 nos
  • Salt – to taste
  • Oil - 2 tsp
  • Curry leaves- few


PREPARATION METHOD:

  • Cook Cauliflower in little water, Turmeric powder and Salt.
  • Beat the Eggs and keep aside.
  • Heat Oil in a pan and allow Mustard seeds and Red chilly to splutter.
  • Add Chopped Onion and Green Chilly and saute well.
  • When Onion turns transparent, add the beaten egg,  grated Coconut and salt and stir continuously.
  • Add Cooked Cauliflower along with Curry leaves  and saute well.
  • When the thoran becomes dry, remove from fire.

Recommended Combination: Serve with Rice / Chappathi / Dosa.

Red Beans and Raw banana stir fry / Vanpayar Kaya Thoran





This is a delicious thoran which can be a good side dish for rice. Its rich in protein and iron.

INGREDIENTS:

  • Red Beans -  ½ Cup
  • Raw Banana(cut into small pieces) - ½ Cup
  • Grated Coconut – 1 cup
  • Turmeric powder - ½ tsp
  • Cumin seeds- pinch
  • Garlic pod - 1 nos 
  • Chilly powder - 1 tsp 
  • Mustard seeds - 1 tsp
  • Red chillies - 2 nos
  • Coconut Oil - 1 tsp 
  • Curry leaves - A few
  • Salt to taste


PREPARATION METHOD:

  • Cook Red Beans/ Vanpayar in a Pressure cooker with Turmeric Powder and Water for 3 -4 whistle. 
  • Crush Coconut, Cumin seed, Chilly Powder and Garlic. 
  • Heat oil in a pan.
  • Cook the banana with Turmeric powder, Salt and Water.
  • Once the Banana is cooked well, add crushed Coconut mix and cooked Beans.
  • Mix well.
  • Heat Oil in a Pan.
  • Add Mustrard seeds and Red chillies into it, allow to Splutter.
  • When it starts to splutter, add the Urad dal and fry it.
  • Add Thoran and Curry leaves and stir for a minute and remove from fire.

Recommended Combination: Serve hot with Rice.

Cabbage and  Cherupayar can form a really good combination.

INGREDIENTS:

Cherupayar Thoran / Moong Daal Thoran is a delicious dry dish rich in protein often served with rice or kanji.

INGREDIENTS:
  • Moong Daal / Cherupayar - 1 cup
  • Grated coconut - 3/4 cup
  • Cumin seeds- pinch
  • Garlic pods - 2 nos 
  • Turmeric powder - ¼ tsp 
  • Chilly powder - 1 tsp
  • Mustard seeds - 1 tsp
  • Red Chilly -2 nos
  • Coconut Oil - 1 tbsp 
  • Curry leaves - A few
  • Salt to taste

PREPARATION METHOD:

  • Cook moong daal/ cherupayar in a pressure cooker with turmeric powder and water for 3 -4 whistle. 
  • Crush coconut, cumin seed, chilly powder and garlic. 
  • Add the coconut mix and salt to the cooked daal and mix well. 
  • Heat oil in a pan.
  • Add mustard seeds and red chilli and let it splutter.
  • Add cooked daal and curry leaves, mix well.
  • Saute for a minute and remove from fire.
Recommended Combination: Cherupayar Thoran / Moong Daal Thoran can be served hot with Rice, Morucurry and Achar / kanji  .

Vanpayar Thoran / Red Beans Thoran



Vanpayar Thoran / Red Bean Thoran is a delicious dry dish rich in protein often served with rice or kanji.

INGREDIENTS:
  • Red Beans/ Van payar - 1 cup 
  • Grated coconut - 3/4 cup 
  • Cumin seeds- pinch
  • Garlic pods - 2 nos 
  • Turmeric powder - ¼ tsp 
  • Chilly powder - 1 tsp 
  • Pepper Powder - ½ tsp
  • Coconut Oil - 1 tbsp

Vazhuthananga Thoran / Brinjal Thoran



Vazhuthananga Thoran / Brinjal Thoran is a dry side dish served with rice.
Its a very simple yet tasty recipe.

INGREDIENTS:
  • Diced vazhuthananga / Brinjal - 6 nos
  • Chopped Onion - ½ cup
  • Grated coconut - ½ cup
  • Chilly Powder - ½ tsp
  • Red Chilly -2 nos
  • Turmeric powder - ¼ tsp
  • Mustard seeds - 1 tsp
  • Salt - to taste
  • Oil - as needed
  • Curry leaves - few

PREPARATION METHOD:
  • Heat oil in a pan.
  • Add mustard seeds and red chilli and let it splutter.
  • Add chopped onion and saute till translucent.
  • Add brinjal/ vazhuthananga with turmeric powder, chilly powder and salt.
  • Cover the pan with a lid.
  • Slow down the flame and cook it for 10 mins. 
  • Add grated coconut and curry leaves and mix well.

Muringaila Thoran / Drumstick leaves Thoran



Drumstick Leaves or Muraingaila thoran is a dry dish which is very nutritious. It is a good side dish for rice.

INGREDIENTS:
  • Drumstick leaves - 2cups
  • Grated coconut - 1 Cup
  • Chilly Powder - ½ tsp
  • Red Chilly -2 nos
  • Rice - 1 tsp
  • Garlic - 2 nos
  • Turmeric powder - 1/4 tsp
  • Mustard seeds - 1 tsp
  • Salt - to taste
  • Oil - as needed

PREPARATION METHOD:
  • Detach the leaves from the stem and chop it very nicely.
  • Heat oil in a pan.
  • Add mustard seeds and red chilli and let it splutter.
  • Add rice fry it.
  • Once rice becomes crispy add drumstick leaves, salt, turmeric powder.
  • Sprinkle water and cover the pan and cook for 10 mins.
  • Crush Coconut, garlic and chilly powder together and add to it.
  • Mix finely and slow down the flame and cook it for 2 mins.
Recommended Combination: Muraingaila thoran can be served hot with Rice.

Pavakka Thoran / Bitter Gourd Thoran.



Pavakka / Bitter Gourd is a stomachic medicine, which serves to tone the stomach, improving its function and increasing appetite. It is also used as a medicine for diabetics. This bitter fruit can be used to prepare a variety of dishes including Thoran. The grated coconut in Thoran reduces the bitterness of the dish.

INGREDIENTS:
  • Bittergourd/ Pavakka (finely Chopped) - 1 big
  • Grated coconut - ½ Cup
  • Finely Chopped Onion - 1 nos
  • Finely sliced coconut - ¼ cup
  • Green Chilly(Chopped) - 4 nos 
  • Turmeric powder - ¼ tsp
  • Oil - 1 tbsp
  • Mustard seeds – ½ tsp
  • Red Chilly-2 nos
  • Rice - 1tbsp
  • Curry leaves - few
  • Salt to taste

PREPARATION METHOD:
  • Heat oil in a pan.
  • Add mustard seeds and Red chilly and allow to splutter.
  • Add rice and fry it.
  • Once rice becomes crispy, add the chopped onion,green chilly and saute well till the Onion turns transparent.
  • Add chopped Bitter gourd, sliced coconut,turmeric powder and Salt .
  • Sprinkle water, cover the pan and let it cook.
  • Add the grated coconut and mix well.
  • Stir continuously till the water dries up.
  • Add curry leaves and mix it.
Recommended Combination: Pavakka Thoran / Bitter Gourd Thoran can be served hot with Rice.

Asparagus Thoran



Asparagus has no cholestrol and is low in calories and sodium, a healthy source of vitamins and dietary fiber. Young shoots of Green Asparagus can be used to prepare delicious thoran as shown in this receipe.

INGREDIENTS:
  • Chopped Asparagus - 1cups
  • Grated coconut - ¼ Cup
  • Chilly Powder - ½ tsp
  • Red Chilly -2 nos
  • Garlic - 1 nos
  • Cumin Seed -¼ tsp
  • Urad Daal - 1tsp
  • Turmeric powder - 1/4 tsp
  • Mustard seeds - 1 tsp
  • Salt - to taste
  • Curry Leaves -few


PREPARATION METHOD:
  • Cook Asparagus with turmeric powder and salt in little water.
  • Crush Coconut ,Chilly powder,Garlic and Cumin seed and add to cooked Asparagus and mix it well.
  • Heat oil in a pan.
  • Add mustard seeds and red chilli and let it splutter.
  • Add urad daal and fry it.
  • Once Urad becomes brown, add Cooked Asparagus and Curry leaves.
  • Stir well and slow down the flame and cook it for 2 mins.

INGREDIENTS:
  • Eggs - 3 nos
  • Finely Chopped Onion - 1 nos
  • Finely chopped Carrot-2 nos
  • Green Chilly(Chopped) - 3 nos 
  • Grated coconut - 4 tbsp
  • Turmeric powder - ¼ tsp
  • Oil - 1 tsp
  • Mustard seeds – ½ tsp
  • Red Chilly-2 nos
  • Curry leaves - few
  • Salt to taste

PREPARATION METHOD:

  • Green Chilly(Chopped) - 3 nos
  • Grated coconut - 4 tbsp
  • Turmeric powder - ¼ tsp
  • Oil - 1 tsp
  • Mustard seeds – ½ tsp
  • Red Chilly-2 nos
  • Curry leaves - few
  • Salt to taste
