Beetroot Dosa




Colourful Dosa......

INGREDIENTS:

  • Dosa batter - 2 cup
  • Finely chopped Green chillies - 4 nos
  • Finely chopped Corriander leaves - 2 tbsp
  • Chopped Beetroot - 1 cup
  • Ghee - 2 tsp
  • Gingelly Oil
  • Salt to taste

PREPARATION METHOD:

  • Cook beetroot well and let it cool.
  • Grind it into a smooth paste.
  • Add the beetroot paste, chopped green chillies, corriander leaves and salt to the dosa batter and mix well.
  • Heat a frying pan and smear some oil.
  • Spread a spoonful of the batter to a heated pan.
  • Smear little ghee on the top.
  • When the base is golden brown, turn the other side and cook well.

Beetroot Chappathi





It is a healthy dish which everyone would like.

INGREDIENTS:
  • Wheat Flour - 2 cups
  • Chopped Beetroot - 1 cup
  • Chopped Green Chilly - 2 nos
  • Chopped Cilantro - 1 tbsp
  • Ghee - 1 tsp
  • Salt to taste

PREPARATION METHOD:
  • Cook beetroot well and let it cool.
  • Grind it into a smooth paste.
  • Add the beetroot paste, salt, chopped cilantro, chopped green chilly and ½ tsp Ghee to the flour and mix well.
  • Knead the dough with hands gently until it becomes soft and keep aside for 30 minutes.
  • Make the dough into Small balls.
  • The dough is rolled out into thin discs with help of dry flour .
  • Heat the tawa and cook both sides of the rolled Chappathi by smearing little ghee.

Beetroot Vada




Beetroot Vada is a quick tea time snack. It is a healthy and nutritious vada. kids also love this colourful and
delicious snack.

INGREDIENTS:
  • Grated Beetroot - 1 cup
  • Finely chopped Shallot - 10 nos or  Onion - ½ cup 
  • Beasn Flour / Gram Flour / Kadala Maavu  - 1 cup
  • Finely chopped Ginger - 1 tbsp
  • Red Chilly - 3 nos
  • Curry Leaves - 1 stem
  • Salt to taste
  • Oil for frying

PREPARATION METHOD:
  • Mix chopped shallot,chopped Ginger, chopped Red chilly,Curry leaves, Beetoot and salt with gram flour/ Kadala maavu.
  • Sprinkle some water to make a thick dough like parippuvada dough.
  • Heat oil in a pan .
  • Take small amount of the mixture and make a ball. 
  • Flatten the ball in to a round shape using hand.
  • When the oil is hot put each one slowly and fry both sides.

Recommended Combination: Serve hot with Black Coffee or Tea

Beetroot Cherupayar Thoran / Beetroot Moong daal Stir Fry





Beetroot Cherupayar thoran is a nutritious thoran.

INGREDIENTS:

  • Finely chopped Beetroot – ½ cup
  • Moong Daal / Cherupayar - ½ cup
  • Finely chopped Onion – 3 tbsp
  • Roundly cut Green Chillies - 2 nos
  • Grated Coconut – 1 cup
  • Turmeric powder - ½ tsp
  • Cumin seeds- pinch
  • Garlic - 1 nos
  • Chilly powder - ½ tsp
  • Mustard seeds - ½ tsp
  • Red chillies - 2 nos
  • Coconut Oil - 1 tsp
  • Curry leaves - A few
  • Salt to taste


PREPARATION METHOD:

  • Cook Moong Daal/ Cherupayar in a Pressure cooker with Turmeric Powder and Water for 3 -4 whistle.
  • Crush Coconut, Cumin seed, Chilly Powder and Garlic.
  • Heat oil in a pan.
  • Add mustard seeds and red chillies, allow to splutter.
  • Add onions and green chillies , sauté until transparent.
  • Add beetroot into it.
  • Add turmeric powder,little water and salt.
  • Slow down the flame and cover the pan and let it cook.
  • Add Cooked Beans/ Moong Daal to it and mix well.
  • Cook Beetroot and Beans together for 2 - 3 minutes.
  • Add the crushed Coconut and mix well.
  • Add Curry leaves and stir for 2 minutes and remove from fire.

Recommended Combination: It can be served with Rice / Chappathi.

Beetroot Curry



Beetroot is rich in dietary fiber and has no cholestrol, which makes it a healthy side dish.
Beetroot Curry is a tasty side dish for Chapathi or Naan.

INGREDIENTS:
  • Chopped Beetrot -2 medium size
  • Diced Onion- 1 no
  • Chopped Potato - 1 no
  • Diced Tomato - 1 no
  • Grated Coconut- ½ cup
  • Red Chilly Powder - 1 tsp
  • Coriander Powder- 1 tsp
  • Turmeric Powder- ¼ tsp
  • Fennelseed powder - 1 tsp
  • Coconut Oil -1 tbsp
  • Salt -to taste
  • Curry leaves - a few

PREPARATION METHOD:
  • Cook Chopped Beetroot, Onion and Potato along with Chilly Powder, Coriander Powder, Turmeric Powder, salt and water.
  • Grind the coconut into a fine paste.
  • Add this paste to the cooked vegetables along with Fennelseed powder and tomato.
  • Allow to boil for few minutes. 
  • Turn off the stove and add Coconut Oil and Curry leaves.
Recommended Combination: Beetroot curry can be served hot with Chappathi / Rice / Poori / Dosa

Beetroot Mezhukkupuratti / Beetroot Stir Fry



Beetroot Mezhukkupuratti / Stir Fry is a tasty side dish which goes together with Rice.
Beetroot is rich in dietary fiber and has no cholestrol.

INGREDIENTS:
  • Chopped Beetrot -2 medium size
  • Chopped Onion - 1 small
  • Turmeric powder - ¼ tsp. 
  • Red chili powder - ½ tsp.
  • Salt to taste
  • Oil -1 tbsp
  • Curry leaves -a few

PREPARATION METHOD:
  • Cook beetroot in little water along with turmeric powder, chilli powder and salt.
  • Heat oil in a pan.
  • Put onion into it and saute till it turns translucent.
  • Add the cooked Beetroot and curry leaves into it and fry it.
Recommended Combination:Beetroot Mezhukkupuratti can be served with Rice.

Beetroot Pachadi



Beet root Pachadi is typically made of cooked Beetroot and Green Chilles added in Coconut paste and Curd.

INGREDIENTS:
  • Finely Chopped Beetroot - 1 nos
  • Grated coconut - ¼ cup
  • Green chillies - 4 nos
  • Cumin seeds -¼ tsp
  • Curd - 1 cup
  • Turmeric powder - ¼ tsp
  • Water - ¼ cup
  • Fenugreek Powder- a pinch
  • Curry leaves - a few
  • Salt  to taste
  • Mustard seeds - 1 tsp 
  • Red chilly - 2 nos 
  • Coconut oil -1 tsp 

PREPARATION METHOD:
  • Grind the coconut and cumin seeds to a fine paste.
  • Cook chopped beetroot and green chilly in water along with salt and turmeric powder .
  • When the water almost dries up, add coconut paste into it.
  • When it starts boil,turn off the stove and allow to cool.
  • Add curd to the mixture and stir well.  
  • Heat oil in a pan.(optional)
  • Add mustrard seeds and red chillies into it, allow to splutter.
  • Add curry leaves.
  • Pour the seasoning over the pachadi.
  • Sprinkle fenugreek powder and mix well.

Recommended Combination: Serve with Rice.




Beet Root Thoran



Beet Root is a good food for health. It contains carbohydrates, mainly in the form of sugar, and it has a little protein and fat.
Beet Root thoran made up of Beet Root,Coconut Cuts,Onion and Grated Coconut.

INGREDIENTS:
  • Chopped Beet Root - 1cup
  • Chopped Onion- ½ Cup
  • Roundlycut GreenChilly - 5
  • Coconut Cuts(nicely slice)- ¼ Cup
  • Grated coconut - ¼ Cup
  • Chilly Powder -½ tsp
  • Corriander Powder --½ tsp
  • Perinjeerakam Powder -¼ tsp
  • Turmeric powder - ¼ tsp
  • Red Chilly -2 nos
  • Mustard seeds - 1 tsp
  • Black gram -1 tsp
  • Salt - to taste
  • Oil - as needed
  • Curry leaves - few

PREPARATION METHOD:
  • Cook Beet Root,Coconut Cuts,Onion,Green Chilly with Turmeric powder,Chilly Powder,Corriander Powder,Perinjeerakam Powder and salt in littlewater.
  • Add Grated Coconut to the cooked Beet Root and mix it well.
  • Heat Oil in a pan.
  • Add Mustard seeds and Red chilly and let it splutter.
  • Add Black gram and fry it.
  • Once Black gram becomes brown add Cooked Beet Root and Curry leaves.
  • Stir well and slow down the flame and cook it for 2 mins.
Recommended Combination: Serve hot with Rice
